Recipe: charred broccoli, a personal favourite

The perfect side dish to almost anything. Have it with steak, fish, stir fry, pasta, the choices are endless. The best thing? Its pretty damn healthy.



Ingredients:

1 head of broccoli

1 tablespoon olive oil

Sea salt

Coarse Ground black pepper

1 clove of garlic (optional)


Wash your broccoli thoroughly before cooking. Cut your the broccoli florets evenly, and each floret in half, potentially quartered if they are on the larger side. If you are using garlic, mince your garlic with your preferred method.


Heat the oil in a shallow non stick frying pan over high heat. When the oil is simmering, add the broccoli, taking care not to get splashed by the oil! Spread the florets out evenly on the pan, allowing for each piece to touch the surface. Let it cook for 2 mins. During this time, use some tongs (or spatula, whatever you have), and pick up a few pieces to see their progress. You may find that the pan isn't cooking all the pieces evenly, so rotate the little nuggets around a bit. Once they are all showing a nice crispiness, you can turn the pieces over, add the chopped garlic, stir it in and cook for a further 2 minutes on medium heat. Sprinkle lightly with salt and pepper to taste. Switch off the heat, and your veggies are ready to serve!
